Italian Prune Plum Clafouti
Baby Spinach with Mandarin Oranges & Red Onions
6 Tablespoons white sugar, divided
14 Italian Prune Plums, halved and pitted
3 eggs
1 1/3 cup milk
2/3 cup all purpose flour
1 1/2 teaspoons grated lemon zest
2 teaspoons vanilla
1 pinch salt
1/2 teaspoon ground cinnamon
2 tablespoons confectioners sugar
1. Preheat oven to 375. Butter a 10in. pie plate & sprinkle with 1
Tbsp. of sugar over the bottom.
2. Arrange the plum halves, cut side down, so they cover the bottom of the plate. Sprinkle 2 Tbsp. of sugar over them. In a blender, combine the remaining 3 Tbsp. sugar, eggs, milk, flour, lemon zest, cinnamon, vanilla, & salt. Process until smooth, about 2 minutes. Pour over fruit in the pan.
3. Bake for 50-60 minutes or until firm & lightly browned. Let stand 5 minutes before slicing. Dust with confectioner's sugar before serving
8 ounces baby spinach, about 5 to 6 cups
1 cup mandarin oranges, drained
1/2 cup chopped red onions
1 tablespoon orange marmalade
2 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil, eyeball the amount
Salt and pepper
Arrange spinach leaves on a large platter or individual salad plates. Top with
mandarin sections and chopped red onion. Whisk together marmalade and
vinegar. Stream oil into dressing while continuing to whisk.
When you are ready to serve, pour the dressing over salad and season
with salt and pepper
